No-one can resist home-made shortbread, so wrangle those kids into the kitchen and get baking.

This recipe is courtesy of Helen Harris, vice president and handicraft secretary of the Murray Bridge Country Women’s Association.

Yum!

Ingredients

  • 125g butter

  • 60g icing sugar

  • 60g cornflour

  • 125g plain flour

  • Good pinch salt

Method

Soften butter, place in mixing bowl with remainder of ingredients and knead well.

Traditional tray shortbread

Place dough in a greased 18cm biscuit tray.

Press out to fit tray and prick with a fork.

Cook in a moderate oven (180 – 200C) for 30-40 minutes or until golden brown.

To make into biscuits

Roll the mix between sheets of baking paper until you achieve your desired thickness.

Chill in the fridge for 30 minutes, then cut the dough into whatever shapes you desire.

Prick with a fork then place on a baking tray and cook at 180C for 15-20 minutes.

Any rough edges of dough can be re-rolled and cut.

Keep an eye on it so it doesn’t burn.
